Measuring Stick Pizza
You don’t have to look very far to get pizza opinions, everyone’s got em and they are all subjective and worthy of being shared. One of the topics I try to bring up with our guests when they are judging pies on the tour is that there are no right or wrong answers. There has to be a reason why everyone can be right, well a wise person once told me that whatever the first pizza you fell in love with as a kid… that is the pizza that you use to judge going forward. Therefore if you grew up on the north side of Chicago, you’ve probably got mad love for a certain deep dish joint that resides on Lincoln Ave. South siders, that list is long and runs up and down Pulaski, Western, Cicero, 95th, take your pick on that one, but I’ll bet it is some sort of “tavern style” thin crust and was served up once a week. For me, growing up in the western suburbs, there was more tavern style available than the deep dish. If we wanted deep dish, me and my knucklehead friends would drive downtown for a deep dish excursion on Superior Street.
My hometown pizza, that I use to judge all pizza going forward happens to reside in the town next to my hometown. I’m talking about Hillside, IL. Everyone from that area should have a good idea the pie I’m about to start talking about. None other than Q’s
Above we have Q’s with the landmark status sign on the left, and owner Mike behind the bar on the right. For me, this place is my measuring stick doing Chicago tavern style pizza at its finest. You will feel like you stepped into a time machine that brought you back to the 60s when you walk through the door, and I thoroughly enjoy that. The atmosphere and friendly staff make for an outstanding experience, especially when they drop off these on your table
There’s my measuring sticks, the sausage garlic on the left, and the Italian beef & green pepper on the right (I feel like that is cheating sometimes… getting an Italian beef on your pie). It would be a given to say that Q’s in Hillside was instrumental in my love / obsession with the world’s most perfect food. I’m not going to break down the flavors and give you a cheat sheet on what this pie tastes like, I believe the pics can handle it for me.
